It makes total sense that Claudia was influenced by clean eating at a young age and stuck with it to turn it into a career. As a child Claudia had a garden and cooked meals for the family. At the age of 22 she worked in a natural foods restaurant and later trained in culinary arts at the New York Restaurant School. But now the meals are gluten-free, a necessity not only for those with celiac disease (1 in 100 Americans) but non-celiac gluten intolerance (1 in 7 Americans).
Claudia grounds herself by waking up early to fix her teenage daughter breakfast. They eat, visit, read and talk. What binds her life recipe together is the time shared around the table on weekends with the entire family gathered enjoying a healthy home cooked meal and sharing stories.
To spice up Claudia’s life recipe, she enjoys nature and travel. Claudia was fortunate to have lived abroad in Australia where she discovered exotic cuisines. Her desire to change the way America eats was reinforced while abroad where she discovered how other countries’ freshness and quality of the food were superior to the food in the United States. Claudia’s ongoing mission is to encourage people to understand and appreciate quality food and mealtime in order to be healthy.
