“I am a runner, a mom, a wife, a healthy eater. I go to church, I’m kind, I have cute clothes – this does not happen to people like me. With an almost one year old, I don’t have time for CANCER. How in the WORLD could I have lymphoma? I’m too young for cancer!!!” were the words of Meredith Greenstreet. In a 45-minute session with a doctor, her shortness of breath (diagnosed by three other doctors as asthma) is now life-changing. Chemo begins the following Wednesday.

Her doctor at U. T. Southwestern appeared to be in her early thirties, someone Meredith could relate to. She was introduced to her oncology team of seven shortly after checking in for chemo. Meredith VERY DIRECTLY states to the team, SHE will beat this cancer and if anyone on the team thinks otherwise, they should be assigned to a new case!

Halfway through the case, with prayers from around the world and a sense of humor, Meredith got a diagnosis that she was 96% curable. The scary process made an impact on Meredith’s life. She found out who her true friends were and became close to extended family that she had not really known before. Meredith found out from this experience what was important. She even states that the cancer may be a blessing in disguise.

Her presence is inspiring, because she shares this story of being diagnosed with cancer, her husband shaving her head and wearing her “new look” with confidence. But what struck me is how Meredith now sees life a little different, and she focuses on the things important to her, because there is no guarantee of tomorrow. Check out Meredith’s Recipe for Life!

  • Meat (Life fulfillment) of Meredith’s Recipe: Meredith’s son Benjamin who took five years to conceive. Even with past filled with successes of a Division 1 volleyball scholarship, great marriage, successful career and beating cancer, Benjamin is the best thing she has ever done, bar none.
  • Health of the Recipe (How Meredith maintains health): SLEEP! Even as a child, Meredith enjoyed her sleep. She believes we heal during sleep. Meredith listens to her hunger cravings and focuses on healthy eating.
  • Nourishment of the Recipe (How Meredith manages her life): Exercise is Meredith’s source of calm. Whether in the gym or running, getting lost in the music that plays through the earphones gives her a sense of release. Yoga helps her re-center and she calls on God to get her through her frustrating moments. Faith is Meredith’s foundation.
  • Binder of the Recipe (People Meredith holds close): Raun, her husband, and her family. When the cancer treatment began, they sat down and figured out a plan of action. Meredith’s family is tight and they are her foundation and strength.
  • Complexity of the Recipe (The extended network): God first, family and positive friends. Cancer has let Meredith know who the real friends are.
  • Recipe on a budget (Financial goals): With an unexpected illness, the Greenstreet’s quickly learned that they needed some work in this area. This process includes planning for their son, Benjamin’s future. A work-in-progress.
  • Spice of the recipe: (Hobbies and interests): Travel with Raun defines them as a couple. Their son, Benjamin allows them to see life through his eyes.

When the ugly head of cancer stared Meredith in the eyes, she quickly learned that her possessions and the latest fashions were not going to save her or give her any sort of strength with such a serious challenge presented to her. What once seemed important was not AT ALL. God sat beside her in the front seat as she handed her frustrations over to him. She knows her family even better because of her journey and she has decided to accept a little help from her friends and family and doesn’t hesitate to ask for it when in need.



Chocolate Layer Cake | So Delicious Coconut Milk

This is a fun and different way to make a chocolate layer cake. I used So Delicious Coconut Milk Creamer for the glaze and to make it dairy-free. Think of what you could do to enhance it. Try peanut butter between the layers, or strawberries on top of the glaze between layers or even a tart raspberry jam. It was easy and cooks in just 12 minutes.

Chocolate Layer Cake

Serves: 8
Baker’s Joy cooking spray (if gluten free use coconut oil)
Parchment paper
9 x 13″ dish
1/4 cup cocoa
1/4 cup almond flour
4 large eggs
1/2 cup plus 6 teaspoons sugar
1 teaspoon vanilla extract
Chocolate Glaze
3/4 cup So Delicious Coconut Milk Creamer (original flavor)
1/2 cup semisweet chocolate chips
1/2 cup bittersweet chocolate chips

Preheat the oven to 400°F. Line a pan (preferably a jelly roll pan) with cooking spray and then press the parchment onto pan, spray again. Sift the flour and the cocoa together 3 times to remove lumps. Crack two eggs into medium bowl and in another bowl, crack the other two eggs reserving the whites in a clean bowl and adding the other yolks to the other two eggs. With a hand mixer beat the egg yolks with the 1/2 cup sugar until they are pale yellow and mixture has thickened. Add the vanilla. Clean and dry beaters and mix the whites, adding a teaspoon sugar and beating to soft peaks then gradually adding the remaining 5 teaspoons sugar. Beat to a glossy meringue.With a spatula, fold half of the meringue into the yolks and sprinkle with half of the flour mixture. Stir to blend but do not over mix. Fold in remaining meringue and chocolate. Blend so color is consistent. Pour batter into the pan and spread to edges. Bake 10 to15 minutes until the cake springs bake when gently touched. Let the cake cool on a metal rack. Once cooled, place cutting board over pan and turn cake over onto board. Gently remove the parchment paper. Use a serrated knife and cut off uneven edges. Bring the So Delicious to simmer (181°F) and stir in chocolate chips with a whisk. Allow to sit 15 minutes so it thickens.

Spread half of the glaze down the middle and spread to edges (don’t do this if you want to spread with peanut butter or raspberry jam. If using fresh strawberries, adhere thin slices to the glaze) . Cut the cake into 3 even size pieces crosswise and stack so you have three layers with glaze in between. Place on a dish where glaze will not run off and ladle remaining glaze over the top to cover. Serve garnished with fresh berries or with coconut ice cream. DIVINE! Non dairy is the route we are taking when we can and this works for pleasing everyone! Yummy!

Ground Turkey Ragu | Pasta Recipes

Ground Turkey Ragu is a great pasta recipe that replaces ground pork with ground turkey for a leaner version. I find the sauce with a hint of fennel and fresh basil is delicious. With a nice salad, this is a wonderful dish for company and the sauce can be made ahead and reheated.

Penne with Turkey Ragu
Serves: 4
1 (16 ounce) container whole milk ricotta cheese
1 teaspoon dried marjoram
1 tablespoons olive oil
1 pound ground turkey
1 medium onion, chopped
2 bay leaves
2 garlic cloves, minced
1/2 cup red wine
1 (28 ounce) can or carton Italian tomatoes (with juice)
1 teaspoon dried oregano
1 1/2 teaspoons dried basil
1 tablespoon fresh sage, chopped or 3/4 teaspoon dried
1/2 teaspoon herbes de Provence
2 tablespoons balsamic vinegar
2 teaspoons Tony Chachere’s Creole Seasoning
1/4 teaspoon dried fennel seeds, chopped
1 teaspoon fresh rosemary
1/2 cup fresh basil, chiffonade (thin strips)
Sea salt and pepper to taste
8 ounces penne or rigatoni cooked according to directions (Add 1 tablespoon sea salt to the water per 16 ounce package)
Grated Romano cheese, optional
Mix the ricotta cheese and the marjoram. Sprinkle with salt and pepper and stir. Set aside at room temperature until dinner is prepared. For the Ragu, heat the olive oil and then add the turkey. Cook the turkey over medium heat until no pink remains. Break up any large pieces with your spatula. Add the onion, bay leaves and garlic and saute until the onion is translucent. Add the wine and cook until the wine has evaporated (about 4 minutes). Add the tomatoes, the liquid from the tomatoes, the oregano, basil, sage and herbes de Provence, balsamic and Tony’s. Cook over low for an hour. Add the fennel, rosemary and fresh basil and simmer on low 5 minutes. Cook the pasta according to package directions and warm the ricotta cheese slightly either in the microwave or stovetop or serve at room temperature. Before serving, line pasta bowl bottoms with the ricotta cheese mixture, pasta is next and spoon a generous amount of sauce over the top.
Note: Quinoa or brown rice pasta make this slightly healthier.
