It is a tradition in many parts of the United States to have black-eyed peas on New Year’s Day. Peas are a sign of good luck because they were the only crop that was not burned during the Civil War. (Those burning the southern crops thought only animals ate the peas so southerners saw it as luck that they had these edible peas remaining!) Not only are the black-eyed peas a sign of luck for a New Year, but they are typically cooked with pork because pigs forage and root so we add pork as a sign toward positive motion forward in the New Year. We add greens to remind us of the abundance with money allows us. So get your peas today and get your soup ready for tomorrow with black-eyed peas, pork and greens and forage ahead to a prosperous 2012!

Black-eyed Pea Soup
Serves: 10
1 (16 ounce) bag dried black-eyed peas
5 slices bacon, diced
1 cup onion, chopped
2 teaspoons seeded, finely chopped jalapeno
1 clove garlic, minced
Pinch sea salt
Dash ground black pepper
2 Knorr Extra Large Beef Bouillon Cubes
3 cups water
3 leaves kale or Swiss chard, tough stems removed, sliced crosswise
2 (10 ounce) cans Rotel Tomatoes and Green Chilies
2 cups grated medium sharp Cheddar cheese
Use the quick soak method on black-eyed peas (stated on the back of the package). Drain peas. Sauté the bacon until lightly browned and add the onion. Sauté until translucent. jalapeno, garlic, salt and pepper. Continue to sauté and add the 2 bouillon cubes and water. Add the rinsed black-eyed peas and simmer 1 1/2 hours. Add the greens and let wilt in soup. Add the 2 cans of Rotel tomatoes, Heat to warm through.Grate the cheese (Pre-grated cheese does not melt as easily.). Serve each bowl with a topping of grated Cheddar. A delicious balance of flavor and perfect for bringing the tradition of black-eyed pea prosperity to you and your family in the New Year.
